You can use greenboard on the ceiling. it just needs to be 5/8″ tickness
for fire resistent.

Greenboard is a freakin’ ripoff, and the assclowns who put the requirement
in the codes for kitchens and baths are getting a nice payoff from the
drywall manufacturers.
